Curing Salt #2

A common curing salt used in food preservation to prevent or slow spoilage. Curing Salt #2, also known as Prague Powder #2, has high nitrite levels that help keep flavor and color intact while curing. Dissolve 1 oz. curing salt in 1 quart ice cold water for use on 25 lbs. of meat. Mix in curing salt/water mixture at the same time as you mix the seasoning into the ground meat.
